Golden Butter Trifle

Ingredients

For the Cake:

  • 1 packet YesYouCan Essential Golden Butter Cake Mix
  • 2 large eggs
  • 2/3 cup (160ml) milk (dairy or plant-based)
  • 1/4 cup (60ml) vegetable oil

For the Trifle Layers:

  • 2 cups prepared vanilla custard (store-bought or homemade)
  • 2 cups whipped cream (dairy or plant-based)
  • 2 cups fresh fruit (strawberries, raspberries, blueberries, or your choice)
  • 1/2 cup fruit jelly, set and cubed (optional)
  • 1/4 cup sherry or orange juice (optional, for soaking the cake)
  • Grated chocolate or toasted nuts for garnish

Instructions

  1. Preheat your oven to 180°C (160°C fan-forced). Grease and line a square or rectangular cake pan.

  2. Prepare the Golden Butter Cake:

    • In a mixing bowl, combine the YesYouCan Golden Butter Cake Mix, eggs, milk, and oil. Mix until smooth.
    • Pour the batter into the prepared pan and bake for 20–25 minutes, or until a skewer inserted into the center comes out clean.
    • Allow the cake to cool completely, then cut it into cubes.
  3. Prepare the Fruit and Cream:

    • Wash and slice fresh fruit. Set aside.
    • Whip the cream until soft peaks form.
  4. Assemble the Trifle:

    • In a large trifle bowl or individual glasses, layer the ingredients:
      • Start with a layer of cake cubes. Drizzle with sherry or orange juice if desired.
      • Add a layer of custard, spreading evenly.
      • Top with fresh fruit and a layer of jelly cubes, if using.
      • Add a layer of whipped cream.
    • Repeat the layers until the bowl is full, ending with whipped cream on top.
  5. Garnish and Chill:

    • Decorate the top with grated chocolate, extra fruit, or toasted nuts.
    • Chill in the refrigerator for at least 2 hours before serving to let the flavors meld together.
