Oat Free ANZAC Cookies

Ingredients:

  • 1 cup YesYouCan Plain Flour

  • 1 cup desiccated coconut

  • ¾ cup brown sugar

  • ½ cup almond meal (or extra coconut if nut free)

  • 125g unsalted butter

  • 2 tbsp golden syrup

  • ½ tsp bicarbonate of soda

  • 1½ tbsp boiling water

  • Optional: ⅓ cup dried blueberries

 

Instructions:

  1. Preheat oven to 160°C (fan forced). Line a baking tray with baking paper.

  2. In a large bowl, mix together flour, coconut, brown sugar, almond meal and dried blueberries (if using).

  3. Melt butter and golden syrup in a saucepan over low heat.

  4. In a small bowl, dissolve bicarb soda in boiling water, then stir into the butter mixture (it will foam).

  5. Pour wet mixture into dry ingredients and stir until combined.

  6. Roll into tablespoon-sized balls, flatten slightly, and place on the tray with space between each.

  7. Bake for 12–15 minutes or until golden brown. Let cool on tray for 5 minutes before transferring to a wire rack.
