Ingredients:

1 cup YesYouCan Plain Flour

1 cup desiccated coconut

¾ cup brown sugar

½ cup almond meal (or extra coconut if nut free)

125g unsalted butter

2 tbsp golden syrup
-
½ tsp bicarbonate of soda

1½ tbsp boiling water
- Optional: ⅓ cup dried blueberries
Instructions:

Preheat oven to 160°C (fan forced). Line a baking tray with baking paper.

In a large bowl, mix together flour, coconut, brown sugar, almond meal and dried blueberries (if using).

Melt butter and golden syrup in a saucepan over low heat.

In a small bowl, dissolve bicarb soda in boiling water, then stir into the butter mixture (it will foam).

Pour wet mixture into dry ingredients and stir until combined.

Roll into tablespoon-sized balls, flatten slightly, and place on the tray with space between each.

Bake for 12–15 minutes or until golden brown. Let cool on tray for 5 minutes before transferring to a wire rack.
