Low Carb Almond Meal Bread

Ingredients:

  • 1 cup YesYouCan Plain Flour (145g)

  • 1 cup almond meal (100g)

  • 1 tbsp psyllium husk

  • 1 tbsp chia seeds

  • 2 tsp baking powder (gluten free)

  • ½ tsp salt

  • 3 large eggs

  • ½ cup water (120ml)

  • 2 tbsp olive oil

  • 1 tsp apple cider vinegar

Instructions:

  1. Preheat oven to 180°C and line a small loaf tin with baking paper.

  2. In a large bowl, whisk together the dry ingredients: flour, almond meal, psyllium, chia, baking powder and salt.

  3. In a separate bowl, mix the eggs, water, olive oil and vinegar.

  4. Add wet mixture to dry and stir until combined. Let the batter sit for 5–10 minutes so the chia and psyllium can absorb the liquid.

  5. Pour batter into the loaf tin, smooth the top and bake for 35–40 minutes or until golden and a skewer comes out clean.

  6. Cool completely before slicing.
