Nacho Mini Quiche

Makes 8–10 mini quiches

Ingredients:

  • ½ cup YesYouCan Plain Flour

  • 4 large eggs

  • ½ cup dairy free milk (or regular milk)

  • ½ cup dairy free cheese (or cheddar), shredded

  • ½ cup corn kernels

  • ½ red capsicum, diced

  • ¼ cup black beans (rinsed and drained, optional)

  • 1 small jalapeño, finely chopped (optional)

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • Olive oil or non-stick spray

  • Fresh chives or spring onion, chopped (for garnish)

 

Instructions:

  1. Preheat oven to 180°C. Lightly grease or spray a muffin tin.

  2. In a mixing bowl, whisk together eggs and milk until smooth.

  3. Add flour and whisk again until lump-free.

  4. Stir in cheese, corn, capsicum, black beans, jalapeño, paprika, salt and pepper.

  5. Divide the mixture evenly between muffin cups (fill about ¾ full).

  6. Bake for 20–25 minutes until golden, puffed, and set in the centre.

  7. Cool slightly, garnish with fresh chives or spring onions, and serve warm or chilled with guacamole or salsa.
