Makes 8–10 mini quiches
Ingredients:

½ cup YesYouCan Plain Flour

4 large eggs

½ cup dairy free milk (or regular milk)

½ cup dairy free cheese (or cheddar), shredded

½ cup corn kernels
-
½ red capsicum, diced
-
¼ cup black beans (rinsed and drained, optional)

1 small jalapeño, finely chopped (optional)

½ tsp smoked paprika
-
Salt and pepper to taste

Olive oil or non-stick spray

Fresh chives or spring onion, chopped (for garnish)
Instructions:

Preheat oven to 180°C. Lightly grease or spray a muffin tin.

In a mixing bowl, whisk together eggs and milk until smooth.

Add flour and whisk again until lump-free.

Stir in cheese, corn, capsicum, black beans, jalapeño, paprika, salt and pepper.

Divide the mixture evenly between muffin cups (fill about ¾ full).

Bake for 20–25 minutes until golden, puffed, and set in the centre.

Cool slightly, garnish with fresh chives or spring onions, and serve warm or chilled with guacamole or salsa.
