Ingredients:
- 375g YesYouCan Essential Chocolate Cake mix
- 1/2 cup vegetable oil
- 1/2 teaspoon kosher salt
- 2 eggs or Vegan Egg Replacer
- 3/4 cup chocolate chips
Directions:
- Preheat your oven to 175°C and line two rimmed baking sheets with parchment paper.
- In a medium-sized bowl, whisk together the vegetable oil, pinch of salt, and eggs (or vegan egg replacer) until well combined.
- Add the YesYouCan Essential Chocolate Cake mix to the bowl and mix until fully combined, approximately 2 minutes.
- Fold in chocolate chips and refrigerate the dough for 20 minutes.
- Take heaping tablespoons of the chilled dough and roll them in your hands to form round balls.
- Place each ball about 2 inches apart on the prepared baking sheets. Note that the cookies will spread out during baking, so leave enough space between them.
- Bake the cookies in the preheated oven for 10-12 minutes.
- Allow the cookies to cool for 10 minutes on the baking sheets before transferring them to a wire rack to finish cooling.
