For the Brownie Base:
- 1 packet YesYouCan Choc Fudge Brownie Mix
- 2 large eggs
- 1/2 cup (125ml) vegetable oil
- 1/4 cup (60ml) water
For the Coating:
- 2 cups icing sugar
- 1/4 cup (25g) cocoa powder
- 1/2 cup (125ml) boiling water
- 2 cups desiccated coconut
Instructions
-
Preheat your oven to 180°C (160°C fan-forced) and line a square baking pan with baking paper.
-
In a mixing bowl, combine the Choc Fudge Brownie Mix, eggs, oil, and water. Mix until smooth.
-
Pour the batter into the prepared pan and bake for 20–25 minutes, or until the edges are firm and a skewer inserted in the center comes out with a few moist crumbs. Allow to cool completely.
-
Once cooled, remove the brownie from the pan and cut it into even squares (approximately 5cm x 5cm).
-
In a bowl, whisk together icing sugar, cocoa powder, and boiling water until smooth. Adjust consistency with extra water if needed—it should be thin enough to coat but thick enough to cling to the brownies.
-
Place the desiccated coconut in a shallow dish.
-
Using a fork or skewer, dip each brownie square into the chocolate mixture, ensuring it is fully coated. Allow excess to drip off.
-
Roll the chocolate-coated brownie in the desiccated coconut until fully covered. Place on a wire rack to set.
-
Repeat with all brownie squares and allow them to set for at least 30 minutes before serving.
