Gluten Free Banana and Walnut Muffin Recipe
Bananas make a great partner for brain food walnuts! Try this easy and quick gluten free recipe for a banana walnut muffin!
INGREDIENTS
- YesYouCan Banana Bread Mix
- 3 medium eggs
- 80g melted non-dairy margarine
- 120g walnuts, chopped
- 1/2 teaspoon cinnamon
- 1 mashed banana
DIRECTIONS

Preheat oven to 160oC (fan forced) or 180oC (conventional).

Line a cupcake tray with patty cases or spray with canola oil.

In a bowl, mix 3 eggs, 170ml water, 80g melted non dairy margarine, 120g chopped walnuts, 1/2 teaspoon of cinnamon and 1 mashed banana with YesYouCan Banana Bread Mixwell and place in the patty cases.

Fold by hand until batter is uniform.

Bake for approx. 20-25 minutes.
