Toffee Banoffee Slice

Ingredients for Banana Cake

  • 400g YesYouCan Banana Bread Mix
  • 71g margarine/unsalted butter
  • 178g bananas (medium)
  • 133g eggs or vegan egg replacer
  • 71ml vegetable oil

Method

  1. Preheat oven to 160 degrees.
  2. Peel and mash bananas with a fork. Soften butter.
  3. Combine Banana Bread Mix, bananas, butter, oil, and eggs in a bowl. Mix with a whisk until well combined. Keep aside.

Prepare Caramel Top

Ingredients for the Caramel Top

  • 133g castor sugar
  • 133g margarine/unsalted butter
  • Salt (to taste)
  • 2 whole bananas

Method

  1. Melt sugar in a pan until light golden, add butter while stirring continuously to make a smooth caramel.
  2. Pour the hot caramel on the baking tray.
  3. Slice bananas into halves (horizontally) and arrange bananas on the caramel top.
  4. Pour the prepared banana bread mix on top of the arranged bananas.
  5. Flatten the batter with a spatula.
  6. Bake at 160°C for 30 minutes.
  7. Let it cool slightly and flip the cake on a platter, allow it to cool completely.

Ingredients for Toffee Buttercream Frosting with Salted Caramel

  • 53g castor sugar
  • 31g margarine/unsalted butter
  • Salt (to taste)
  • 44g cream frosting (or vegetable cream)
  • 133g softened butter/margarine
  • 89g condensed milk
  • Salted caramel (to taste)

Method

  1. Melt sugar in a pan until light golden, add butter while stirring continuously. Once butter has melted into the sugar, add cream while stirring. Cook until smooth and creamy consistency. Add salt to taste. Let the caramel sauce cool completely.
  2. Cream butter/margarine to a pale and fluffy texture. Fold in the condensed milk gently. Finally, add in the salted caramel and mix well.
  3. Transfer frosting to a piping bag and keep it aside.

Assembly - Toffee Banoffee Slice

  1. Cut equal squares of the cooled caramel top banana cake.
  2. Frost the top with toffee buttercream frosting.
  3. Place sliced bananas on top of each slice.
  4. Drizzle with salted caramel sauce.
  5. Enjoy this delicious treat!
