- 1 cup YesYouCan fine grind polenta
- 3 cups water
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking oil for frying (vegetable oil or olive oil)
Instructions:
-
In a medium saucepan, bring the water to a boil over high heat.
-
Stir in the YesYouCan fine grind polenta, salt, and black pepper.
-
Reduce the heat to low and simmer the polenta, stirring constantly, until it thickens and becomes smooth (approximately 5-7 minutes).
-
Pour the cooked polenta into a greased square or rectangular dish, spreading it evenly to create a smooth layer. Allow it to cool and set in the refrigerator for at least 1 hour or until firm.
-
Once the polenta has set, remove it from the refrigerator and cut it into desired shapes, such as squares or fingers.
-
Heat about 1/4 inch of cooking oil in a frying pan over medium heat.
-
Carefully place the polenta pieces in the hot oil and fry until golden and crispy, about 2-3 minutes per side.
-
Remove the fried polenta from the pan and place them on a paper towel-lined plate to remove any excess oil.
-
Serve the gluten-free fried polenta hot as a delicious and versatile side dish or appetizer
