INGREDIENTS

1 large egg or Vegan Egg Replacer

240 mL low fat plain yogurt

80 mL vegetable oil

YesYouCan Plain Flour

1⁄2 teaspoon baking soda

3/4 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1⁄2 cup granulated white sugar

1 cup blueberries

1 1⁄2 cups white chocolate chips
DIRECTION

Preheat oven to 190°C (ovens may vary)

Grease baking muffin tray or use or make muffin liners

Lightly beat 1 large egg

Mix together 240 mL plain yogurt (low fat or vanilla) and 80 mL vegetable oil, 2 cups YesYouCan Plain Flour, 1⁄2 tsp baking soda and 3/4 tsp baking powder, 1/4 tsp salt, 1 tsp vanilla extract and 1⁄2 cup granulated white sugar (note that because we are using yogurt; the batter will be thick).

Add 1 cup blueberries and 1 1⁄2 cups white chocolate chips, or as many as you would like

Bake for approximately 20 minutes.
