Ingredients:
- 1 x baked YesYouCan Banana Bread loaf
- 3 eggs
- 375mL milk or dairy free alternative
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 tbsp butter or dairy free margarine, melted
Optional to serve:
- Vanilla ice cream
- Caramel sauce
- Chopped walnuts or pecans
Instructions:
- Preheat oven to 170°C and lightly grease a medium baking dish.
- Cut the baked banana bread into large cubes and place evenly into the prepared baking dish.
- In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, and melted butter until combined.
- Pour mixture evenly over the banana bread cubes, gently pressing the bread down slightly so it absorbs the custard mixture.
- Allow mixture to rest for 10–15 minutes for the bread to soak up the liquid.
- Bake for approximately 35–45 minutes or until the top is golden and the centre is just set.
- Allow pudding to cool slightly before serving warm.
- Serve with vanilla ice cream, caramel sauce, or chopped nuts if desired.
