Banana Bread Pudding

Ingredients:

  • 1 x baked YesYouCan Banana Bread loaf
  • 3 eggs
  • 375mL milk or dairy free alternative
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp butter or dairy free margarine, melted

Optional to serve:

  • Vanilla ice cream
  • Caramel sauce
  • Chopped walnuts or pecans

Instructions:

  1. Preheat oven to 170°C and lightly grease a medium baking dish.
  2. Cut the baked banana bread into large cubes and place evenly into the prepared baking dish.
  3. In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, and melted butter until combined.
  4. Pour mixture evenly over the banana bread cubes, gently pressing the bread down slightly so it absorbs the custard mixture.
  5. Allow mixture to rest for 10–15 minutes for the bread to soak up the liquid.
  6. Bake for approximately 35–45 minutes or until the top is golden and the centre is just set.
  7. Allow pudding to cool slightly before serving warm.
  8. Serve with vanilla ice cream, caramel sauce, or chopped nuts if desired.
